Roughly how many tracks (or songs tho some will be solo piano and others will be vocals plus 3 or 4 instruments) can you record onto an 8 GB sdhc card?

To answer that, there are too many variables. Are you recording 16 or 24 bit files, 44.1, 48 or 96 kHz sample rate files? Some examples:
1 min of mono audio @ 16 bits and 44.1 kHz results roughly in a 5 MB file.
1 min of mono audio @ 24 bits and 44.1 kHz results roughly in a 7.6 MB file.
1 min of mono audio @ 24 bits and 48 kHz results roughly in a 8.2 MB file.
1 min of mono audio @ 24 bits and 96 kHz results roughly in a 16.5 MB file.

To calculate: bit depth x sample rate x 60 / 1024 / 1024 / 8 x 60 is your file size in MB for 1 minute per mono track.

I am using the Dp-03sd. So recording is 16 bit/44.1 kHz
Just wanted to get an idea before getting a sd card of what to expect.
I went ahead and ordered a 32 GB card (class 10)
A lot of tracks will be stereo....some solo instrumental mono
 
32 GB should give you more than enough capacity. From the above examples, a stereo track takes simply twice as much space. So a 5 minute song with 10 tracks (where stereo counts for two) would be 250 MB. One quarter GB ;). Have fun filling up that card!
