I think I am getting mono not stereo on my US-322

I have a stereo microphone pair plugged into the two mic input ports, the USB is connected to my laptop, and the two RCA output jacks are connected to my video camera mic input. I also want to record this digitally using either CuBase LE or Audacity.
I have read the manual, but am unfamiliar with the terms. For example,

• Do I want Multitrack or stereo mix on the bottom switch. What does stereo mix mean?
• Where do I want the Mon Mix dial set?
• In the interface panel, where should the Line Outputs 1-2 be set? Mixer output or computer
• Why are all the other interface settings greyed out?
