When using multiple scenes during pre-mastering, you can at any time, raise or lower a fader a tad with the JUMP setting because by moving a fader, the internal fader level will jump to the physical fader level. My question is when or how is the CATCH setting most useful ?

I use the catch function because when I load a song, I am able to see where the physical faders got their position on this song. So I can move the physical faders to their position and catch the virtual fader marks.
For me it is a saving function for the last positions of the fader of every song
 
No it wouldn't.
Because with jump the internal (virtual) fader would jump to the positions of the real faders when you move them.
This would destroy your old config of the fader positions of your songs.
So you would not know which position the faders had.
