UH 7000 analog out what connector / cable

hi all, I'm thinking of getting the UH 7000, I'm an 'acoustic' musician and not that familiar with electronics 'n stuff so please go easy on me ..
The 'Outputs' on the 7000 are 3 pin (XLR ?)
I think it best to leave the Digital Output alone for now as I haven’t got a clue what they’re all about.

To use the - Analog audio outputs - ANALOG LINE OUT 1/2 it it a simple case of using an XLR to RCA ‘phono’ plug / cable converter ?.

Also is it possible to input / record using two inputs at the same time, e.g. line & mic ?.

Yes to both questions. My output is XLR to 1/4" TRS jack for the monitors, but I can't see any problem with using an XLR to RCA converter cable. I record vocals and acoustic guitar at the same time, but I have 500 series preamps up front. Line out of preamp into the line in of the 7000 for the guitar. The line in on the 7000 should work fine with Acoustic guitar, but you may need a DI if you want to plug in an electric.
